Southwestern Pumpkin Hummus

Ingredients:

6 - 8 Garlic Cloves
1/4 c Fresh Cilantro
1/4 c Lime Juice
1/4 c Tahini
2 Tbsp Pumpkin or Olive Oil
1 can (15 oz) Pumpkin
3 tsp Cumin
1 tsp Salt - to taste
1/2 tsp Chili powder
1/2 tsp Chipotle Pepper ( ground or flakes)
Pumpkin Seeds, for garnish

Preparations:

Put the garlic cloves into a food processor and pulse to chop fine.
Add the remaining ingredients (except pumpkin seeds) and blend
until smooth. Transfer to a bowl, cover, and refrigerate overnight.
Garnish with pumpkin seeds and drizzle with additional oil before
serving. Serve with veggies, crackers, or tortilla chips.

Makes approx. 2 1/4 cups.
