Ingredients:
1 1/2 lbs Sweet Potatoes - peeled & cut into chunks
3 Tbs Butter
1 Scallion - 1/4 cup
1/4 tsp Salt
1/4 cup Honey
1/4 tsp Vanilla Extract
Preparations:
In pot, combine potatoes with enough water to cover. Over high heat,
bring to boil. Simmer until tender, about 10 minutes. Drain, reserving
1/3 cup cooking water.
Melt butter in same pot over low heat. Add scallions and salt; cook,
stirring occasionally, until slightly softened, 1 minute. Add potatoes,
honey, vanilla and reserved cooking water to pot. Remove from heat;
mash until smooth.
A touch of vanilla extract adds zing to this deliciously different way to
serve good-for-you sweet potatoes.
