Laurel's Coconut Shrimp

Ingredients:

24 raw large or very large Shrimp
1/2 cup Flour
Salt to season
2 beaten Eggs
1 1/2 cups Shredded Coconut
Oil for frying
1 cup Cocktail Sauce
1/4 cup Crushed Pineapple


Preparations:

Roll shrimp in flour seasoned with salt, then dip in beaten egg.
Coat shrimp with coconut and deep fry.

Mix sauce and pineapple and serve on the side.
