Ingredients:
1 small Scallion
2 Tbsp Butter
2 Tbsp Gorgonzola, crumbled
2 (6 oz) Filet Mignons
1/4 tsp Salt
1/4 tsp Pepper
2 slices Bacon
2 tsp Olive Oil
1/2 lb Mushrooms, sliced
Preparations:
Heat oven to 425 degrees.
Thinly slice white part of scallion and set aside. To make Gorgonzola Butter:
finely chop green portion of scallion and place in bowl with butter and cheese.
Stir. Sprinkle beef with 1/8 tsp salt and pepper.
Wrap a piece of bacon around each piece and secure with toothpick. In a skillet
heat oil and brown meat (about 5 mins). Transfer to baking pan and roast 7-10
minutes or until done to your preference. Heat same skillet used for beef and
add mushrooms, white part of scallion, and remaining salt and pepper. Cook
until tender on low (4 mins). Spoon mushrooms onto 2 plates and top each with
a filet. Serve with Gorgonzola Butter on top.
